I developed this for Mike Reillys High Spirit Farm in Hunterdon Co., NJ. Several Members of the now Gone to Glory Club referred to as "Roosters" make this for their families through out the year. Barkinbob’s TEX-MEX Rollitini Cheezy Meat Sauce. Super Bowl Party main stay for “Reilly’s Roost” Jugtown Mountain, NJ Ingredients for large group - 3 pounds of # 3 Ronzoni Rotelle No. 124 -3 pounds of chopped beef or venison mixed with beef suet or pork – 1 large Spanish Onion - 3 - 15 .oz cans of Ro-tel tomato’s and green chilis – 3 jars of Ragu Double Cheddar Cheese Sauce – 2 large cans of Hunt’s diced tomato’s – 2 - 15 .oz can of Corn Kernels ( drained) – Two tbl spoons of chopped garlic – ¼ tspn of Red Pepper flakes – salt and pepper to taste. 1 cup of Cilantro chopped to use a garnish. Boil an extra large pot of water with salt mixed in to cook pasta. Add all 3 pounds quickly and stir until water begins to boil. Reduce heat and cook for 12 – 15 minutes. Stir often and at 12 minutes taste test pasta for doneness. In a large, deep skillet add - Rough cut 1 large onion and sauté it in olive oil over medium heat, until it begins to look clear. Add 2 tbl spns of rough chopped garlic and simmer quickly. Add large can of Hunt’s Petite dice tomato’s to sauce, then 1 can Hunt’s Whole Peeled Plum Tomato’s hand crushed tomatoes. Then 3 cans tomato’s & green chili’s to spice it up. (Rotel or the Wal-Mart Brand.) Simmer on Medium-Low heat covered with a tight lid for 30 minutes. Stir often and taste occasionally. If you think it needs a little more spice add the 1.8 tspn of red pepper flakes after the sauce has simmered for 20 min. In another large skillet sauté the 3 pounds of ground venison flavored with 10% beef suet with a little olive oil and salt and pepper it while cooking. When the sauce has been simmered for 30 minutes or when it tastes good to you. Drain the fat from the cooked meat pan and add the cooked meat and the canned corn to the tomato sauce and stir it in completely. When it if fully blended, set burner to simmer it while boiling the pasta. Stir sauce occasionally to keep it from sticking to the bottom of the pot. Add all the pasta to the boiling water and add the cheddar cheese sauce to the red sauce. Blend it in thoroughly. And let it heat up while waiting for the pasta to cook. Serve with crusty French or Italian bread. If you want to stay in the Tex-Mex theme offer Carona and Shiner Long Neck beers in an ice filled tub. The curly large pasta Rotettl No. 124 by Ronzoni really loads up the the chunky venison sauce. As in all good cooking recipes the ingredients combine to present a "taste/texture" signature that pleases taste buds and will remain in your comfort zone memory for years. March 1, 2016 - opens NJ striped bass seasons on the Delaware River From the Calhoun Street Bridge South to Salem River and Tributaries til March 31, 2016. then no striped bass fishing until june 1, 2016. North of the Calhoun Bridge up the Delaware river and it's tributaries opens on March 1, 2016 to December 31, 2016. NY Hudson River north of GW Bridge April 1 thru Nov. 30, 2016 Minimum length 1 fish between 18 and 28 inches OR 1 fish larger than 40 inches NY Saltwater marine District - April 15 to Dec. 31, 2016. Not all of us are comfortable wet wading in 60 degree water though. I'm young like you and I wouldn't want to be doing that if I didn't have to! Parachute cord for laces. Technique is better and I'm not hitting it quite as hard as I used to though it is still a pretty aggressive cast. It's weird seeing you post on here. You're normally a ghost. Mike's been playing around with more overhang. Not quite 15-20' of it, though. Posting rate is inversely proportional to time on the water and directly proportional time spent with the group. I had no spare rod and I was not leaving fish! My friends could not believe it! now that’s casting and catching with a stump!
