What's your fave baked ziti recipe?

Hello folks,


Looking for a knock your sox off baked ziti recipe. Looking for something dressed up and special. The caveat is, it has to be able to be made the day before and warmed without loosing quality. I will make several pans so it must be able to be frozen.

You can dress it up with meat or seafood. I think the big key is to undercook the pasta by a few minutes, it will finish in the oven, just be sure your sauce is on the wet side, even add some water as needed since the pasta absorbs moisture from the sauce. I use a 50/50 mix of sauce to ricotta, mix in shredded mozzarella, grated parmesan, and bake only til hot. Add more cheese to the top in the last 5 minutes of cooking.


Avoid overcooked, mushy pasta and sauce that is too dry. Use quality cheeses and sauce.

Google "The Food Lab's No-Boil Baked Ziti Recipe"  It is by Kenji Lopez Alt


It is our regular for large groups, and is easy to make.  You don't even cook the pasta, you just soak it in warm water for 30 minutes.


I can't find the red sauce recipe, but is is basically this.


  • Olive oil
  • Butter
  • 2 Small onions
  • 6 cloves of garlic
  • 2 28 ounce cans of who tomatoes
  • Chili Flakes
  • Oregano
  • Thyme
  • Salt and Pepper


Puree it all together, cook for 45 min or so at a low simmer.


It is called "Food Lab's Perfect Simple Easy Red Sauce" or something like that.
