Best Fried Clams in NJ?

Found this online compared it with a few others and they're all about the same. If you're adventurous give it a go. I notice it's whole clams and not strips.

 

   
Fried Clams

SOURCE: A History of Howard Johnson's, Anthony Mitchell Sammarco, 2013

YIELD: 4 servings


INGREDIENTS

  • 1 cup evaporated milk

  • 1 cup milk

  • 1 egg

  • 1/4 tsp vanilla

  • Dash salt and pepper

  • 4 doz freshly shucked clams

  • 1 cup cake flour

  • 1 cup yellow cornmeal

  • Oil for frying


PREPARATION

Combine evaporated and whole milk, egg, vanilla, salt and pepper. Soak clams in liquid and then dredge in combination of cake flour and cornmeal, fluffing them in the flour mix for light but thorough coverage. Shake off excess flour and fry in oil.

The last time I had White Castle clam strips, I tasted a bitter aftertaste.

I did the special a few times and non special more than a dozen times always hoping they would be better.

Similar to most places that do fried clam (strips), Hot and fresh you got like 4 minutes until they harden and become more of a burden than a treat. Same if you cook some prepared ones at home. A couple minutes after they're on the plate they harden. (I always say they "fossilize")

The thick tender type -mentioned earlier-you could take your time and savor them as you ate.

I gave HoJos a fair try over a number of years-but my lasting impression is what I stated.

I’m pretty sure they’re no longer offered on the menu at WC.
