I didn’t say “Taylor Ham “ existed.  I said it’s called Taylor Ham.  In 1906 the Taylor Co. was forced by the government to drop the word ham from its labeling.  It was originally called “Taylor’s Prepared Ham”. Then again I doubt if head cheese has any heads in it.  Sometimes the name of things just don’t die.

I think head cheese has its share of head in it--cheeks and jowls and the like.  What we can be pretty sure it's lacking is cheese.

Its processed pork blended with sugar, salt and spices, pan fried and served with eggs.  In NJ it's a common breakfast sandwich.  Think sausage, egg and cheese but swap in the pork roll in place of the sausage.
