That's cool.  Makes sense now.  Smaller fish are usually better eating anyways.

Normally correct, but one exception to this I’ve found is crappie. I’ve cooked up a couple 15-16” crappie and it tasted the same if not better than the 8-12” crappie I normally eat. Could just be because they are panfish. I know black drum go mushy once they get big. And the older the fish, the more time it’s had to absorb pcb’s and mercury and all that too.

FW fish need to be from very clean water for me to eat.  

 

Never caught or eaten black drum, but I've heard the big ones get wormy.

Big drum of both types are substandard eating fish.

 

20" or so black drum are very tasty however.

The texture of hirame is a treat.  The only problem is that I can't seem to catch many legal California halibut off my beaches.:banghd:

I only fish Saltwater:

 

#1 -- Raw Salmon (that I caught that same day)

#2 -- Raw Blue Fin Tuna (that I caught that same day :)
