deeply disappointed there was no bonito martini or some other bonito beverage

It’s amazing how much taking care of bonito matters. We were just taking about it in the main. The first one I kept I took great care of by other fish standards and it was nasty. There after I had it bleed and on ice immediately  and it’s excellent. I’m talking five minutes matters.

remember growing up when mackerel actually existed inshore in Maine and as kids we weren't doing much prep beyond throwing them in a bucket of water, we knew that if they were dead or soft by the time we got to the dock those ones would become lobster bait and wouldn't be worth eating

On West coast lots of people make sushimi out of bonitos.

Bleed them and cut out fillets.
