If you gather ramps in the spring they make a tasty pesto.

This,  great stuff.   We also make ramp butter and scape butter.  All of this is awesome with some pan seared scallops topped with any pesto you can conjur up.

We've been making it for a few years. This year were had a super crop of basil, and made three different kinds.

One was the traditional method using pine nuts.  The second we substituted pistachios in place of pine nuts. The third using cashews.

All were great, but I thought the pistachio was over the top.

We do. It's a requirement (my parents are Italian and my dad was genovese).

I would be murdered if I used anything but pine nuts. :D

Don't even get me started on recipes that don't use basil. :D

Traditional pesto always works … Cilantro, ramps, arugula all make great pesto . pistachio, almond , walnuts … hmmm mix and match something different … over a simple caprisi salad or even sliced plain home grown tomatoes , with a nice bottle of red or white … might have to chase the bride around the house after all this eating … lol lol lol
