Typically size 4 to 1/0 depending on what size fly  you want and how heavy it is - typically 3” to 5”. 
The heavier the hook the more weight you need to invert it.

Clouser is a generic term for me. Anything from sz.  1 shrimp imitations to 3/0 long shank with 1/4 oz. eyes to imitate big sand eels or small pollack. Most common in my box  is  1/0 -2/0.

Size 2 to 2/0.Alot depends on what you are trying to match bait wise.Also the hook themselves.[ie] short shank,long shank,wire guage,gap,straight eye,stainless,cutting point,etc.

In the fall go with olive over white with pearl polar flash in 2/0 for sandeel imitation also look into half and half. Basically deciever clouser hybrid. Put some thin white saddle hackle at the bend

sz2-4 for shrimp and crabs, and sz1-2/0 for the baitfish patterns.

I don't usually throw anything bigger than that with lead eyes, I let a sink tip do the work

Occasionally use as large as a size 1/0, but mostly smaller (as small as a size 4, but more often 1 or 2)...but I'm not using clouser type patterns to mimic bigger bait fish. I'm guessing that could be done, but would be a bear to cast on a 9 weight or lighter (which represents my own personal wheelhouse)

I tie them from size 6 up to 3/0.   Smaller ones for warm water, and the larger ones for salt.  I don't heavily weight them.  Just enough to insure they ride hook point up.

I'm not sure if others will find this useful but I like to use the minimal amount of weight on flies as possible. For clousers and bonefish patterns where you want the fly to ride hook up this is a fine balance so I weigh the hooks and use this as a reference to balance them:

 

Beadchain:

Medium - 0.16g - max hook size 6

Large - 0.21g - max hook size 4

XLarge - 0.40g

 

Brass Dumbbell:

3.2mm - 0.21g

4.0mm - 0.45g

 

Plain Lead Dumbbell:

Mini - 0.30g

XS - 0.42 g

S - 0.76g

M - 1g 

L - 1.4g 

 

Thick Lead Wire 0.35:

1 cm - 0.9g

2 cm - 0.18g

3 cm - 0.27g

 

Tunsten Bead:

1.5mm - 0.03grams

2mm - 0.06grams

2.5mm - 0.12grams

3mm - .20grams

3.5mm - 0.32grams

4mm - 0.48grams

4.5mm - 0.73grams

FWIW, I tie my Clouser Minnows in sizes 6, 2 & 2/0. 
 

Small, medium and large. Keeping it simple.
