I can crush some Poke and yours looks great , We have 3 different Poke restaurants that are not far but I can't get my wife to go to any of them because it's not like what we got in Hawaii when we lived there , I try and tell her they will make it how you want it you just have to tell them . But No so I go by myself and enjoy it .

For tuna I would cut into cubes too but for fish like seabass , flounder and Tog I like it on a bias and against the grain . Soy , toasted sesame oil , ginger purée , wasabi and lime juice 

Flotation is Grooovey !!
