Son got a pellet smoker to go with his new house. 
First time ever he tried a brisket, turned into dog food, tough and dry. 
At the house warming party he did 2 pork butts, turned out really nice. He read up and talked to a few coworkers that smoke often, 

Now he will be doing a cook off at the fantasy football draft, blind taste testing,

To quote Aaron Franklin (King of Tx barbecue), “ Smoking brisket isn’t difficult, but there’s a lot of things that can go wrong”.

Nice addition for a new house!  Brisket is one of the more difficult BBQ cuts to master in my opinion.  Often tough brisket means it was undercooked which is counter intuitive.  Cooking just the flat of a brisket is also a good way to end up with a dry finished product.

turned out exhalant, the rub was all the basic's. i did about 2 hrs in the smoker may be  another 6or 7 in the oven the injection is what you see in the bottom of the pan. the wood was hickory.
