We’ve been doing sausage onions and peppers lately.  I sear 9-12 sweet  perri sausages on the grill over high, cut 2 peppers and 2 onions.  Then I’ll add the partially cooked sausages, onions, and peppers to a crock pot with ~1/2 cup of white wine, salt, pepper, red pepper flakes, and 3 big garlic cloves crushed.  Cook it over high for 4 hours and serve it over rice or on a roll.  
 

On a roll, it comes out just like the street meat served outside baseball stadiums.  I prefer it over white or basmati rice.

Nice recipe! I'll give it a shot. I might try and use foil in the pan to make cleanup easier. I'll let you know how I make out

Love sausage peppers just can’t handle bell peppers ...substitute the cubanels peppers for the bell peppers and I’m good but the bell peppers talk to me for three days lol lol lol

Must be a seasonal thing, made some just last week.  In the summer I cook it all on the grill, gives it a better taste IMO.  Plus the fat drips off, which I supposed to avoid.
