Turkey Leftovers

Wifey cooked for a crowd even though there were only 4 sitting at the table.

I’ll be eating turkey and all the sides for about a week.

Not a complaint because I love thanksgiving leftovers.

Have a few meals with the leftovers,  sent my middle daughter and family home with enough leftovers for them to have a few meals. Going to make soup out of the carcass,  but that is for tomorrow.

Tonight, turkey and dumplings. Turkey Shepard's pie and then turkey rice soup. Of course turkey sandwiches, sliced turkey, mayo, lettuce, jalapeno jack, and a smear of cranberry sauce, salt and pepper.

 

My oldest daughter wants to eat turkey for at least a week, I'm pretty much done after the weekend!

we have 2 - 9x12 pans of pot pie from last Saturdays turkey in the freezer.

 

Yesterday's Turkey will be portioned in vacuum bags and frozen too. 

maybe some enchiladas from it in Jan.

Was going to try the vacuum seal deal. How well does it freeze? Thought I might use it to have turkey dinner down the road. Freeze well enough for that?

 Oh hell yeah,. 

Keeps stuff frozen well for years.   

Get a vacuum sealer that will seal at any time you want during the vacuum process.  That way you can seal before soft things are smashed.

Had a huge plate of leftovers for lunch today and just finished another plate of leftovers. Maybe one more plate of leftovers tomorrow. Sunday's my birthday and I put in a request for surf and turf, a ribeye steak and giant shrimp.
