My son managed his 1st squid ever tonight on his 1st trip ever! May 5th was my first trip out I got one. It’s gotten better in the last 10 days. Been out 3 times since Monday and it’s getting better and better

Spring Longfin squid like these are delicious. I usually do a super quick cook to preserve tenderness. Though I think(?) I heard that you can get back the tenderness if you pass through the rubbery stage by say simmering in sauce awhile. Never tried it.

 

Shortfin squid? Yech. Like eating flavorless truck tires.

One of our fav ways to eat them is aglio e olio with ground squid.

Make your classic aglio e olio using lots of garlic, olive oil, lemon juice, parsely.  Grind up your squid in a food processor until it's the consistency  of rough hamburg.  Fry in the olive oil mixture and serve over linguini.  Now I just have to go catch squid.
