Not rubbery at all. A little garlic, oil, spices to taste and let them steam open. Once they open, lower temp so that the sauce just simmers. This will keep it warm and allow the clams juices to mix in without over cooking the clams. All in all takes about 10-12 min start to finish. My favorite way to eat em
