First batch of the season. Top photo is out of the brine 12 hours and air dried. Second photo is in the smoker. Apple is the smoke of choice today.

Butterflied with the entire backbone removed. The only bones left are the rib bones, and those can be removed with ease.

Those look Sooo good... I need to get a freshwater license..I only caught a handful of blues last year. Forgot about smoking some trout. Gonna have to start figuring out where to catch a few..

I usually smoke them whole, then the rack pulls out mostly in one piece.

I will freeze them in marinade until I have enough for the smoker.
