Seaside cooking — sushi, sashime, ceviche, hot water poaching recipes

If you had to make a seaside lunch from your catch, how would you go about it? Would you make sushi?  Ceviche?  Perhaps bring a thermos with hot water and poach some filets? Do you have a recipe for such an occasion?

 

In short, how would you cook the fish and what side dishes, recipes, techniques and cooking tools would you bring to serve your catch seaside?

I have begun the habit of taking Ceviche ingredients with me whenever I hit the beach.

 

I meant actually preparing food surfside.  What ceviche ingredients are you taking?  Do you have any good ceviche recipes?  What do you serve as a side with ceviche?

We just have it with Tortilla chips normally

 

Nothing fancy

Limes

Cilantro

Red onion

Garlic

Hot peppers

Yes! I've wanted to, and plan to this season.

Ingredients + fish into a Tupperware. 30 or so minutes in the cooler, crack a cold one and your in bidness.

Crushed barbs save fish, keep that rod bent!

Similar to mine:

 

Tomato

White Onion

Fresh Habeñero or Jalepeño Peppers with seeds removed

Fresh Cilantro

Limes

 

Serve with Tortilla Chips or Saltines, Yeah I know Saltines sound bizarre, but most of the time that we have ordered ceviche in Costa Rica, Panama or Nicaragua it was served with Saltines.  I prefer it with tortilla chips.

 

You can also substitute mangoes instead of the tomatoes, it makes a nice sweet ceviche.
