Ground venison in a crock pot?

Years ago, had some venison chili that was outstanding.  Was just given some ground venison by a friend and want to try and make it.

 

I know venison is lean, any ideas on cook time?  

 

I have googled.it but several recipies have times that differ by enough that I thought to ask here.

Length of time in the crock pot is really determined by whether I used dry beans or canned beans.  I brown my venison burger first so it is essentially cooked when it goes in the crockpot.  When I use canned beans I go two hours on high, then three to four hours on low - the onions are always soft that way.  OH

basically I cook the meat first, then i add the veggies (peppers, onions, garlic etc..) and sweat those down, then i add the diced tomatoes (drained) Canned beans (rinsed and drained) etc... once that all warms up its ready to eat and if its on low temp extra time doesn't hurt it lets all those flavors meld together

 

DAN’S CHILI RECIPE
INGREDIENTS:
1 clove garlic
2lbs Chopped meat
6 slices bacon
2 red peppers
2 green peppers
1 long hot pepper
1 onion
1 can black beans (Washed and Drained)
1 can pink beans (Washed and Drained)
1 can white beans (Washed and Drained)
1 can red beans (Washed and Drained)
1 can diced tomatoes
1 can crushed tomatoes
½ can tomato sauce
Salt & Pepper to taste
¼ cup brown sugar
1/8 cup Molasses
Tabasco to taste
1/8 cup honey
2 Tbsp Cumin
DIRECTIONS:
1. 1 large sauce pot chop and brown bacon
2. Add chopped meat and brown
3. Drain off fat
4. Add peppers, onion, and garlic (sweet veggies)
5. Add Diced tomato, crushed tomatoes, hot pepper – Cook 10 minutes
6. Add beans, molasses, honey, brown sugar, cumin and Tabasco
7. Simmer 1 hour

also note sometimes ground venison is mixed with beef for added fat for burgers, not sure if you have a mix or just 100% ground venison

Sandflee, I made your venison chili recipe this evening, the wife and kids loved it. I omitted the honey and hot pepper but used everything else. Added a bit of heat to mine once in the bowl. Good stuff, going in the keep file per the Mrs.
