So. I am in texas on business and hitting some local joints looking for good bbq and steak.   Disappointed to say the least.  Too much damn mesquite.    Mexican hole in the wall was best place so far.    I would say so far the carolinas have the best bbq brisket and beef. Not to mention pork.

Yeah, I really want to bite into gritty charcoal when I eat my steak. It's quite tasty. :dismay:

Do you mean cowboy ribeyes?  Then yes, unless you like paying for bone.

Oh, you mean laying the steak on the coals?  Never tried it, even when I first saw Alton do it years ago.
