Dam some nice smacks! What state are you fishing out of?

 

I like to steak my smacks up and brine in salt water prior to cooking. Lightly dust with blacken seasoning and grill on high heat or use a cast iron pan. Serve with a slice of lemon and enjoy!

The tell tale sign for the king is the Grey dorsal fin and sharp drop on the lateral line. Kings and Cero will have a jet black dorsal.
