Shrimp and grits

One of my favorite things to eat.

 

Can't do it now except for special occasions.

 

But man...a nice piece of skirt steak sitting on top of some shrimpy cheesy crits wtih some greens on the side and a fried egg on top, with a mint julep on the side.

 

Man, that's livin'

Oh man.

 

You take some mint.

 

And a little sugar.

 

And you put it in the bottom of a glass.

 

And you muddle the mint and the sugar to release some of the minty goodness and infuse that with the sugar.

 

A drop of water helps things along.

 

Then you fill the glass with crushed ice.

 

And then you cover the crushed ice with bourbon.

 

Then you fold the mint and sugar slurry into the bourbon.

 

And a drop of water at this stage helps too.

 

Then you drink.

I always put some lump crab meat in with the shrimp so people don't have to chop up their shrimp to get seafood bites in each grits spoonful. The egg in the grits is a good way to go, too.
