Last night one of my kids remembered my maple-cayenne glazed hot smoked salmon. Must have made quite the impression -- I haven't made it in years! I smoke it at about 170 until the internal hits 140-145.

Easy to do. After you brine the filet and dry it, start smoking it. Give it an hour to pick up some smoke flavor then paint on the maple syrup, dust with cayenne and leave it until it's done! :th:
