Big bad Google has and will keep track of all the places you visit or search.

The provided link will walk one through deleting one's history & pausing the collection of one's future history.

So if you use google as the search engine but do not have a google account what do you do in order to disable the history function?

Nothing, they store your search history on their servers for up to 18 months.

Use a proxy.

Splain how to do that, in detail.

What a proxy? It works as a middle agent between you and Google. Your search request is sent to the proxy, which then relays the request to Google. The response is then sent to the proxy which relays it to you, Google sees the request from the proxy ip.

There are tons of them, but they tends to slow your browsing.

Google it.
