Speck for Dinner & report from the South East

Speckled trout have been off and on in the SENC for the past couple months; Mostly and many 12-13” trout on a regular basis. Few have exceeded 3lbs of my knowledge in my area; I hope colder water will bring in larger trout into the surf later this month. Small soft plastics have been working well for me lately; live shrimp and mirrolures have brought in the larger ones lately around solid structure, but few. What’s your favorite way to cook your trout?
