As you know unpastuerized cider can't be sold in Massachusetts.

I made a major discovery last year around Thanksgiving, You can make your own.

Start with one gallon uncooked cider. Add a quart of it to a cooked gallon. Wait a coupla days

and viola! Cider with a snap instead of apple juice.

According to the Mass Dept of Public Health, Food Protection Program. It just has to be labeled with a warning statment.

 

"Warning: this product has not been pasteurized and, therefore, may contain

harmful bacteria that can cause serious illness in children, the elderly, and persons

with weakened immune systems."
