Home made tomato soup

It's that time of year!

They're coming in like crazy from our garden.

My wife's: blanch, skin, chop coarse, celery with leaves, sweet onion, garlic, carrots and a little bell pepper. Barely cooked (almost a gazpacho) She then freezes this in double gallon ziplocks. I'll steal it and simmer it down to make sauce (add tomato paste) Or, run it through a food mill, reduce and add a dollop of heavy cream at the end, fresh basil as a garnish.

Sour dough grilled cheese sandwiches.

Sorry I can't help but. Years ago (about 20) I took a can of tom.soup and read the ingredients and just threw it all together by eye, plus some milk it came out great. Never wrote it down. Now I just looked at a can and they stopped putting most of it on the label. PMO. Oh well, just time to experiment.

My mom made them often during the summer and they are soothing. I don't have the exact recipe, but I will list how she do it.

Boil some pork bone, chicken meat, or beef for broth taste.

Few slices of ginger for taste.

Few tomato, each chopped into about 8 pieces (like an orange) skin and all.

Celeries, corn, potatos all goes into the pot and boil for about 30 min.

Serve. drool.gif
