Correcting Bitter aftertaste Romesco Sauce

Tomatoes, Garlic, Shallot, sweet paprika, pumkin seed, olive oil ... pureed.

 

Smells good, bitter aftertaste. Added a touch of sugar. Better but still bitter.

 

Anybody out there know how to correct that problem?

Usually this sauce has one of the following nuts in it( almond,pine nuts or hazelnuts) The fat from the nuts will counter the bitter(acidic) taste.

Also dried red bell peppers are used instead of paprika... paprika if over used will impart a bitter taste.
