Harrissa marinade for beef or lamb.

Harrissa is a chile paste from North Africa, ground chiles-lots of salt and roasted cumin. Think Abobo sauce but not as hot (come to think of it adobo might substitute OK) You have to hunt a bit to find it, but make this sauce. Marinade in it and serve it on the table.

 

* 4 tablespoons extra-virgin olive oil, divided, plus additional for brushing

* 4 garlic cloves, pressed

* 2 tablespoons (packed) golden brown sugar

* 2 tablespoons soy sauce

* 1 tablespoon fresh thyme leaves

* 2 teaspoons harissa sauce

 

Mild earthy slightly sweet. Quite good. I did chunks of sirloin on a kebab, they were a big hit
