This is part of my learning curve. I rubbed in olive oil and coated in Pepper, Salt, and Garlic and let it sit overnight.  Then moistened with apple juice and beef broth combo during cooking.

 

Also wish I had made a sauce for on top.. next time.. Baby back ribs and wings planned for this weekend.

Do yourself a favor and grab an inexpensive ( relatively speaking) bone in chuck roast, take it to pull and put it over grits or mashed tatters. Can also make killer sandwiches with it with pepperoncinis and provolone. One of my favorite things to do. I’m also a huge fan of pee dee style pulled pork.
