scup+beach+small coleman grill

takin the wife (minus kids) to the 4 wheel drive beach club tomoorw. I will grab some scup early then some fluke and striper (hopefully) but I know what to do with them...all for a nicce, on the beach lunch...

 

question- how would you prepare the scup/porgy on a beach with only a small coleman gas grill? I've never even kept a scup so I have no idea how to prepare- do I need to fillet or can I just gut, dehead and cook? Also, please be specific as to what you would use, if anything, for seasoning...

Brian;

 

Get a cast Iron skillet, some oil and pan fry the scup. Use a simple flour dusting with salt and pepper added You can either fillet em' or gut and scale em like trout.

This is exactly what popped into my head when I read your title.

I would consider making 3-4 vertical cuts in the sides of the fish, right down to the spine. Season the fish with S&P and then dust with flour.

Toss it in the hot oil till GBDdrool.gif
