Easiest Catfish sammich recipe ever...

Hi all,


Now, this little sammich is easy as pie to make, and to me seems like a simple, no-brainer. However, I've been making them at cookouts recently, and they have been a huge hit. So while I'm a little gun shy at posting due to how obvious this seems, here goes....I call it Bottom feeder on a bun.


A medium size catfish filet will count as two servings, or sandwiches.


Take an oil brush and brush down your fillets with a little olive oil.


Apply generous amounts of creole/Cajun seasoning to each side of your fillet.


Take a fresh cut half of a lemon and get and squeeze plenty of juice onto the fillet.


Grill on both sides until flakes easily and appears cooked, occasionally squeezing somne remaining lemon juice on while over the grill. (very easy fish to cook.)


Split the fillet in two halves with your spatula.


Take a regular hamburger roll, (tastes much better on plain ol' white), and apply liberal tartar sauce to both sides. Add a slice of tomato, and there it is. The sandwich that I have received a standing ovation for in recent days. Unreal....beers.gif
