Striper Collar

I got a striper from my fish guy last week, from the cheasapeake right now. After I fileted, I cut the collars off. I put it on the grill skin on and let go for a about 10min, let the skin get nice and charred. Unreal how meaty it is, literally like eating a chicken thigh. So when you filet your fish, remember before you throw out the head, to cut off the collars and save those for you and your VIP's.

Connecting to the anal vent is a long tube; squeeze out the stuff inside it and eat it raw- it's absolutely great and is a delicacy in some cultures!

The part that the guy in this picture is holding with his left hand. The triangular piece part neck and belly, has the 2 sets of fins on it. cut the fins off with sheers
