Hot Italian venison sausage

Tried my hand at making some venison sausage yesterday. I used an amalgamation of recipes I found on the net.


approx. 4 1/2 pounds of venison

3/4 lb of ground pork

2 tbs of course salt

2 tps of ground pepper

1 cup asiago cheese

4 tbs of fennel seed - toasted over medium heat for about 5 minutes, then crushed

3 cloves of chopped garlic

2 chopped long hots

2 tbs of Italian seasoning

1 tbs of parsely

2 tbs of paprika

2 tbs crushed red peppers

a couple of crushed bay leaves


I cubed the venison, mixed in the above ingredients minus the pork and let sit in the fridge for a couple of hours. I then course ground the venison, added the pork and a bit more of the above spices and ran that through the grinder with a medium grind. One thing I did learn is that if you put the meat in the freezer for about 15 minutes before grinding, it goes through the grinder much easier. cwm40.gif Fried up a small patty and must say it's pretty damn tasty. drool.gif All that's left is to stuff it in casings.

Mmmm good!


I'm mulling over adding a couple of hogs to next years hunt, I'm thinking they might make a decent sausage with some venison. I'll keep you recipe in mind.
