Very nice thanks. Stuffed them and seared in a cast iron skillet, finish in the oven at 375 for 20 minutes, Deglazed the pan with marsala wine and added salt, pepper, cumin and cilantro and some raisins.

 

Served with a side of 1/4 inch slices of red potatoes grilled with evoo salt pepper and rosemary.

About 2 fingers. I just seared the one side and turned them over in the cast iron pan and put them right in the oven and the residual heat in the pan took care of searing the other side. Even at that could have cut oven time by 5 minutes. They were still juicy but any more time would have ruined them.
