  1. What did I catch? I was fishing Off the Cape in about 40' on A sandy bottom and I snagged it. Does anyone know what this is?
  2. So, I've been on a homemade sushi kick this season, and this was a dish I made a few weeks ago. The basic technique is to briefly salt the fillets, then layer them between sheets of kombu (kelp seaweed) to cure for several hours. This method adds a subtle depth of flavor to the delicate flesh of the fluke. For those of you into sushi, I highly recommend this method for fluke, tog, etc.
