soy sauce: rice vinegar or vinegar of choice, or lime juice or yuzu: sake
Add minced garlic, ginger, scallions if desired.
Marinate for 30 min - 1 hr
broil or pan fry (skin side up if broiling, skin side down if pan frying)
be sure to press down lightly (20 sec) if pan frying to hold the skin down and keep it from curling.
Serve with steamed rice and lime wedge. Ume plum. Bowl of miso soup. Salad or kimchi. Also nice with salty roasted potatoes.
