    But I was under the impression that this was a cult for Brother Brian - I do not know the other brian of which you speak.

  2. The breading is too thick and the snitz too thin. Butter burns in this application. The meat is over cooked before breading is browned the way you want it. Try a thicker slice of meat,s+p both sides, dip in beaten egg and then coat with seasoned bread crumbs(skip the flour - it just makes the breading too thick and gummy.) Fry in olive oil(or oil of your choice) at med high to start for a few mins on the first side and reduce heat slightly when you turn the meat over. Cook until the 2nd side is just golden brown.

     

    Thanks Paul. I do like my schnitzel thin, but you are totally right about the flour making it gummy.

    I buy really lovely extra virgin olive oil (as I refuse to use canola or veg crap) and if I'm not using coconut oil, it's my EVOO.

    The only reason I tend to use butter for the schnitz is for the flavour.

    I find there's quite a difference from frying the meat in melted butter, rather than oil.

     

    add some oil to the pan with the butter. It will keep the butter from burning.......

     

    See, I think this and maybe keeping my schnitzel thicker and cutting out flour may make them just the crispy/tender I'm looking for.

     

    As for the cutting board, I tend to use wood.

     

    I know, I know - bacteria in the wood causing stomach bugs. But I have really nice knives and I hate the sound of using them on plastic or glass, (though I agree it is more sanitary)

    But I really scrub everything afterwards - raw meat doesn't bug me much.

     

    I've helped butcher deer several times and handling raw meat very rarely bothers me, so I think that's why I'm lax(ish) with my cutting board.

    That being said I'm washing my hands every time I turn around, because I'm handling other things...

     

    A 12" cast iron would probably be a good place to start, I'm just greedy and I want one of those big mofo's that when you hit a guy with it, he stays down. :devl:

    Electric is the problem... no kidding...

     

    So it's chicken fried pork?? :D ..that's fun.

     

    ..I don't doubt it. I much prefer gas - I'm also in the market for a nice cast-iron pan as opposed to my Teflon piece of junk.

    But the only way I can afford one is to buy it in an antique store, clean and re-season it. :huh:

    Nif, could you PLEASE tell the ENTIRE story of your recent move in EXCRUCIATING detail ?? Including things like, how much tape, how many boxes # steps, attitude (and proclivity ) of 

    various attendants (gas station , short order cooks, etc.) and such. Three pages for every day should be considered a minimum :th:  .

    I get that more than I'd like but as far as I know, I have no Asian in me at all.

    My dad was Hungarian, so that accounts for some, other than that I'm German. ((Unless there was an asian milk-man my mum hasn't told me about.))

    Meat, pounded flat and thin, then dipped in flour, eggs and breadcrumbs, then fried in butter until crispy.

     

     

    Could you post a picture of your cutting board?

    Pork.

    I buy a big pork tenderloin from Costco, then cut it up into chops and roasts. If I want schnitzel, I just need to pound out the chop - it takes some work, but it's worth the effort.

     

    But I got the cooking time pretty good this time around. The heat was a little high at first, so the other side isn't quite as nicely browned, but other than that, it turned out well.

    I have no desire to do a face plant on a board

    I've seen it & grimaced

     

    It's when you catch your toe-edge, and fall forward, downhill..and there's always that second of hangtime where all you can think is: "damn..this is gonna hurt..."

    Then all you can do, is pull yourself up, and bow to the audience hanging from the ski lift, clapping. :p

     

    Gave myself a black eye that way once. When you fall forward you're taught to try and fall on your forearms, to prevent braking bones.

    Unfortunately my elbow caught in the snow first and I nailed myself right in the left eye.

    I had sooo many people ask if my boyfriend was beating me...he wouldn't be seen with me for like, a month until the purple colour went away. :D
