Caribou roast in a slow cooker- help needed

Looking for a slow cooker recipe for a caribou roast. I think its a shoulder, I will check when I get home. Shot it in Canada last year so it has been frozen for a while. I have never done a game meat roast, but I assume it will be pretty easy in the slow cooker.

We're having a pot luck at my bosses house... It will be cooking throughout the day and we will eat it at night. One of my colleagues is a vegetarian and this is the most offensive thing I could think to bring...

It's pretty lean so it might need some additional fat to keep it moist... Thinking about wrapping it in bacon. Also, should I brown it before putting it in the crockpot?

Any help/ideas/recipes would be much appreciated.

too bad you don't have a larding needle (or is it barding?)

it looks like an awl but has a hollow needle and a plunger

fill the needle with suet, stick it in the meat, and push the plunger as you withdraw the needle (technically it is a trochar i think)

i would brown it first- maybe put some smoke to it (or stew it with some smoked pork neck bones plus some salt pork) and make a batch of nice meaty beans

small white are my favorite for baked beans

with juniper berries, whole garlic cloves, bay leaf, whole dried peppercorns, pickled green peppercorns, whole cloves......a can of diced tomatoes toward the end

splash of cider vinegar towards the end too

We used to have a chili cookoff every year at work. Every year I cooked venison chili and one woman refused to even taste it. So one year I told her I had used beef. She voted for my chili. It was venison. I told her afterwards and she refused to believe it was not beef.

Some time ago I and my buddies were having quite a run during deer season. I asked everyone to save the hearts and livers for me and they did. At the end of the season I had 10 or 12 hearts in the freezer.
Sliced them around half an inch thick, seasoned salt and pepper, browned them well and put them on low in the crock pot with some red pepper flakes, water and a little cider vinegar until the fell apart. Finished with a little BBQ sauce. Served them at work for lunch with potato rolls, cole slaw and sliced Vidalia onion.

Some were OK with it. Some got a little green.

Thanks for the replies. I didn't realize how truly easy it was in the slow cooker. It's my girlfriend's cooker, and she doesn't like me to use her kitchen appliances... she esentially does all the cooking, I help her out by staying out of the way and doing most of the eating.

I used apple juice for the liquid after doing some internet research. I also added onions, garlic, peppercorns, a package of Knorr's onion soup mix, and wrapped the meat in Pancetta for some fat content... I also added diced pancetta to the pot. I cooked it on low for 7.5 hours.

It came out really well, but may have cooked just a bit too long as the meat was a little dry... pouring the liquid over it alleviated that issue. Cooking it this way took a lot of the gamey flavor out of the meat.
