About twelve years ago I built this deck for a good buddy. About 14' long, by about 6' to 10'. Usta almost butt up against the pool top rail/level with it. New pool he put up is five inches higher than the old deck. He told me about it. Said he was gonna cut the posts at the bottom and raise 'em up. Posts I had secured to the footings I poured. The deck was rock solid and had outlasted his two boys and all their friends, now he's re-married and got two new kids. I told him not to, said I'd come over and look at it.
Long story short, I basically built the same deck on top of the existing one, except using 2 x 6 joists and deck material so I could overhang the pool rails.

Cut the railings and stairs off with a sawzall, then built a 2 x 6 deck down on the ground. Then reset the stairs.
Also, I simply shoulder cut the posts, at 7", and added the seven inches of height needed with 14" additions. Glued, screwed, and lag bolted. Then added new 2 x 6 rail caps...

Eventually, the whole rest of the slab gets the ground deck, and then nice lattice and such around the deck...
Gonna look great, eventually
