Left Over Prime Rib.....What to Do With It

Made a prime rib yesterday......the smallest decent one I could find (almost 4 pounds) was way too big for the two of us.....and while it was probably good (at least Donna said so), I couldn't taste it much since I have a cold that I picked up in Jersey (which is VERY unusual for me, but so be it).

Anyway, there is a good amount of it left, and am trying to think of something to do with it for Wednesday night's dinner.....the part that is left is still quite rare, and I suppose I could just re-heat it and eat as is, but I fear by the time it got hot enough, it would be too well done for our tastes, since it is already in very thick slices and off the bone.......

Was thinking cheese steak or "French Dip" type sandwiches, which would be just fine by me, but not sure how that will go over with the boss.

So, I'm open to ideas..............

I think Thanksgiving came early for sultry.

Otherwise, how about some fahita's or a quick stir fry. Shame to waste a perfectly good piece of steak.

Well that sounds good.

May be too late, but slice into steaks, and throw on the hottest grill you can for about 45 seconds per side. When I was in college, waiting tables at a place with a Prime Rib buffet on Friday night, this was our special on Saturday.

...slice thin while cold and allow to warm to room temp. Heat up gravy. Toast bread. Get veggies ready. When bread is toasted butter it up and plate. Add veggies on the side, top toast with beef and top with gravy.

A stir fry is also great.

Hash?

If it's really rare how about a Tar-tar?

Stuffing 'shrooms

In an omelot

Beef - it's what's for dinner!

Steve,
You know I'm into complicated food like you and Paul are.
We are 3 peas in a kitchen, but...
Leftover prime rib?
Glass of good wine, a small bowl of good salt, pepper grinder, cutting board and a sharp knife. Eat at room temp.
Perhaps a bit of crusty bread and some blue cheese

steve, you can't go wrong with the french dip!

what about using gruyere instead of swiss?
