Rabbit Jerky?

Just thought of this since you basically need as little fat as possible when making jerky and rabbit has 0 fat. Anybody ever had it, used it, or turned their nose at it?

whats funny about rabbit, if u were to be stranded somewhere and had a choice between rabbit and not eating, u would live longer by not eating. too much rabbit will give ya the runs and u will die of dehydration, just a thought if your ever stranded on an island with nothing but rabbits.... never eaten rabbit jerky though

Exactly- its gets you sick due to the lack of fat which means it should, should, make excellant jerky.

Brian....sounds interesting, and I'd be "game".....

Sandflee.....I gotta point out that rabbit does indeed have a certain amount of fat...(Brian's thought)....okay, not a lot, but it does....

I just cooked two rabbits over the past three weeks or so, and the body cavity had a fair amount of fat attached to them (granted it was lumped together in three or four places, but it WAS there.....).....it's not marbled in the meat, but on the outside, sort of like chicken....

And it has never given me the runs......and the way I make it (which I also do with chicken), I'd take it over chicken any day.....

I read a book by a guy talking about trapping rabbits. He said he made some of the best jerky from the loin strips. According to him, it was great.

I was talking to a friend about eating rabbit....

He told me that when he was in the army/marine(I forget) training, they were given a dead rabbit to survive on for some period of time. He said the first thing they ate were the eyes!, something about them being the first thing to spoil.

Anyway, here's the interesting part: He said there is one days nutrition in a set of eyeballs.

so don't forget to eat your eyeballs......

I will fillet a fish, stick my hand in it's guts and pull them out, etc.....no problem.....

But.....

Many years ago, when I couldn't get a rabbit at the supermarket, I happened to be in Boston, and went to a butcher shop in the North End....

They had rabbits (dressed), so I decided to get one.

Unlike the dressed rabbits at the supermarket that I get now, while this one was skinned and gutted, it still had the head attached (actually, that is a MUST if you are to make true German Hossenpheffer.....you need the brains and the eyes, etc.)

Anyway, I got it home, and unwrapped it, and proceeded to start to bone it out, like I usually do for the dish I make.

And there was the head.....I looked at it, and then I looked down at my cat (I hate cats anyway, and she's long gone, and will NEVER have another one, but, um, well, you know), and then I looked at it again, and then looked down at the cat again......

I had to put it away, and lock the cat in the other room.....

I did finally manage to dispatch the head, and bone it up, but needless to say, my rabbit dish that night wasn't quite as good as it usually is......

All the dressed rabbits I got in Florida were head on, it's only the "first" time of seeing that skinned head looking at ya that it's a problem, after that, no problem

Reminds me of my first Deer... was with a local club. When one was killed, they would gut and hang in the outhouse to keep the dogs from getting them
Got one first run, as did the buddy that invited me. He tells me I'm going too slow, got to get it done, and shows me how... arm in the gut up to the elbow, well at least it was warm
No problems after that, just what ya do

My dad was telling me that when meat was short during the war in France, it was very difficult to tell a cleaned rabbit from a cleaned cat. He didn't tell me the trick either. Pawlie
