I just got down here to Hatteras the other day and I've been having fun catching these medium to small blues in the surf. Im a chef, but its always fun and interesting to hear what the local flavor is.

Go buy a copy of Kevins Cookbook in Hatteras where He lives and he has a great recipe for bluefish and several others in it.Oh Hell just ask for Kevin at the Tackle Shop and He will come cook for you. Ask for the book anywhere its only ten bucks.

Fillet
Put onions on Foil then fillets Salt peper and a small pat of butter. Seal and put on grill |
