Default bait question

For drum. How big of a piece of bait do you generally use? How often do you change it? How fresh/old is it? Just some questions I've had after been over the bridge last week. Learned alot more this time,but still have alot to learn.

ok this shows how to chunk it up..
as fresh as possible , heads last longer than the chunks , but it should be changed @ every 20 minutes
