Croaker - Good method, brining is a must for me.....

Little hint.......go 20 minutes breast side up at the end, but before you put it back in the oven, baste just ONCE, sprinkle the skin with salt and garlic powder, put it back without foil, and it will crisp/brown up nicely for you.

My turning method is a bit better, and get s crisp skin all around the bird, but some find it awkward, especially with a big bird. But generally the biggest turkey I will roast is about 12 pounds.

Oh, and that is another thing......if you need more than 12 pounds, two smaller birds work and cook much better than one huge one..........

Im doing thanksgiving this year, and have been looking for the old spend X amount and get a free turkey. The ones ive seen so far you have to spend 300 in reciepts or 150 on select products....Past was spend like 150 total and get a free bird

Stop and shop was .47 for shadybrook farms frozen....Limit one

500 15 lbs.ers, 4500.00, it worked out to .60 a lb. That comes cased packed 4 to a box and includes shipping, And there gone in an hour. We give em' to the other Churches and charities.

Hannafords in Kingston NY, .40 a pound. Less than 10 bucks for a 23 pounder!

A local deli is selling roasted 18lbers for about $3.30/lb. I think I am going to order one from the local poultry farm this year. Can't remember what the price is right now though.

I ordered 2 fresh tuekys from a local farm we used last year. They'll come in at about $3.50 a pound and will be worth every penny.

Steve: I'll probably try your breat side down technique again, but will use the rack this time. What a mess that was last year!

Goffle road poultry farm has fresh killed live weight for $2.99. And they are IMO the best bird around our area.
